1 cup Gluten Free Flour Mix
3/4 cup almond flour
1 Tbsp baking powder
1/2 tsp xanthan gum, optional or try 1/4 tsp (I don't like using these kind of products much, but for a special occasion...)
1/2 tsp salt
1/2 cup vegetable oil (or 1/3 cup butter)
1 cup almond milk (or other milk)
3 Tbsp golden flax meal
Mix all dry ingredients into a bowl (cut in butter if using). Combine all the wet ingredients and then stir into dry. Drop by large spoonfuls onto a greased (or parchment lined) pan and bake at 375°F for 20 to 25 minutes or golden brown. Freeze well, but do not store over a day or two unless reheating before serving.
