Bran Muffins

From Healthy Home Cookin Vol 7.

1 1/4 cups whole wheat flour
1/2 cup wheat germ
1 cup bran
1/3 cup Sucanat
1 1/2 Tbsp Ener-G Baking Powder
1/2 tsp sea salt
3/4 cup dates, chopped (or raisins)
1/4 cup applesauce (or vegetable oil)
1 1/4 cups water
1/4 cup molasses
2 tsp maple flavor, optional

Preheat oven to 400°F. Prepare muffin pan. Combine all dry ingredients in large bowl. Combine wet ingredients and quickly mix wet into dry. Bake at 375°F for 20 to 25 minutes.

Serves 12
Preparation time: 5 minutes
Cooking time: 25 minutes
Ready in: 30 minutes
