This is a great gluten free substitute for cracked wheat cereal, Sunny Boy, or even for oatmeal.
1 3/4 cup buckwheat
4 cups water
1/4 cup coconut (or almonds)
2/3 cup chopped dates (or raisins)
1/2 tsp sea salt
1 tsp vanilla, opt
Combine all ingredients in 2 quart pot and bring to a boil. Simmer for 20 minutes covered. I like this with sliced almonds and raisins. You can also use dried or fresh fruit and much more!
