Oat Bran Muffins

A quick breakfast - NEW recipe and great substitute for Bran Muffins.

1/2 cup rye flour (or try buckwheat for GF)
1 1/2 cups oat bran
1 cup ww flour or unbleached (or GF flour)
3/4 cup Sucanant (or brown sugar)
1/3 cup flaxmeal
2 tsp baking powder
1 tsp baking soda (optional)
1/2 tsp salt
1 cup raisins
1/3 cup vegetable oil
1 cup apple sauce
2 organic free range eggs (or use egg replacer)
2 Tbsp molassas, optional

Preheat oven to 375°F and prepare muffin tin, I used parchment muffin papers. This batch will make 24 small ones or 16 large muffins. Combine all dry ingredients in a large bowl. Combine wet ingredients in measuring cup or small bowl. Mix wet into dry. Reduce heat, add raisins, and simmer for 5 minutes. Bake at 375°F for 12 to 18 minutes.
