1/3 cup fresh squeezed lemon juice
1 1/2 cup water
1 Tbsp lemon zest
Several drops of Lemon Oil - doTerra has a VERY nice flavor - I used about 5 "shakes" of the bottle.
1/3 cup cornstarch
1/2 tsp sea salt
3/4 to 1 cup raw sugar to taste
Gluten Free Crust OR Easy Pastry
1. Blend all together well, adjust lemon oil to taste, in medium saucepan.
2. Cook over medium heat until thick.
3. Pour into pre-baked crust.
4. Chill, about 4 to 6 hours, and serve with whipped topping.
