An easy, tasty treat.
1/4 cup pineapple juice concentrate
1/4 cup to 1/3 cup raw sugar (or alternative)
3 Tbsp lemon juice, fresh best
2 Tbsp orange juice concentrate
12 oz silken tofu, extra firm
2 tsp of Instant Clear Jel*
Just Like Graham Crust - gluten free option too!
Combine all in food processor and blend until smooth (not crust or fruit topping of course). Pour into pre-baked crust. Chill and serve. A bit soft, but nice.
*Variation: omit clear jel and add 1/4 cup cornstarch after blending and cook over med heat until thick. Top with fruit topping of your choice and chill.
Preparation time: 15 minutes
Chilling time: 2 to 4 hours
Ready in: 4 hours

Toppings: Cherry Pie Filling, or Raspberry Sauce are axcellent.
