A delicious non-diary ice cream, vegan and gluten free! This creamy, delicious Ice Cream got rave reviews from NON-vegetarian's and Non-vegans!! Rich, creamy, smooth and not icy. Slight coconut flavor but still very nice.
1 can full fat coconut milk
1/2 cup corn syrup (can use other sweetener but this makes the best texture)
1 vanilla bean (split and scoop seeds) or 1 tsp vanilla
1/2 to 1 cup French Vanilla Creamer (or use coconut cream)
1/2 cup raw cashews (NOT roasted) or blanched almonds
1 cup almond milk
1/2 to 3/4 cup skor bits or chopped roasted pecans
1/2 cup chopped chocolate chips
Combine all ingredients, except add ons, and blend well until very smooth. (If you don't have a Vita-mix blend the cashews with coconut milk first before adding any other ingredients to get them smooth). Stir in "add ons". Transfer to an ice cream maker and follow the directions!
Smooth and creamy!!!
IF you don't have an ice cream maker - omit the "add ons" and freeze mixture in ice cube trays. When ready to serve use a champion juicer (with blank) or a powerful blender (many do ice now) or food processor. Not as creamy as with ice cream maker, but still good.
