Whipped Tofu Topping

From Health Home Cookin Vol. 4. Healthy & Gluten Free

12 oz pkg silken organic tofu, extra firm
3 to 4 Tbsp agave nector or maple syrup (can use stevia or raw sugar as well)
1 tsp vanilla extract (or powdered vanilla)

Process all in the food processor on high until very smooth.  Chill and serve.  This is a bit soft. The faster your food processor, the fluffier and thicker this will get. Try your blender too (requires much stopping, starting, and stirring).
