Banana Bread

1 1/4 cup mashed ripe bananas (about 3 med)
2 organic free-range eggs (or egg replacer)
1/4 organic Canola oil (or other)
1 1/2 cup Gluten Free Flour Mix
2 tsp baking powder
1/2 cup Xyla or 1/2 tsp stevia to taste, optional (I made it without any and it is fine, but a little sweetener would bring out the flavour better.)
1/2 tsp sea salt
2 Tbsp vanilla extract
1 tsp cinnamon
3/4 cup walnut pieces

Prehead oven to 350 F and line a 9" loaf pan with parchment paper (or oil well). Mix dry ingredients. Combine wet ingredients. Mix all together. Spread loaf pan and bake at 350°F for 50 to 60 minutes.
