6 med yellow or white potatoes
4 to 6 small purple or red potatoes
2 to 4 med carrots
1 tsp sea salt (or Seasoning Salt)
1. Peel and wash potatoes (peeling optional).
2. Cut into wedges (about 1” chunks or so).
3. Sprinkle with salt and place in prepared pan.
4. Bake at 400°F for 20 to 30 minutes. Stirring twice, every 10 minutes.
Variation: add 1 med red onion, 4 to 6 Tbsp BBQ Sauce or Ketchup, and/or 1/2 to 1 tsp Italian Herbs. Naturally gluten free
