NEW Gluten Free Flour Mix

Taken from the NEW Healthy Home Cookin' Gluten Free Favorites Appendix

This flour can be an adequate substitute for all purpose flour in many, many recipes.

1 cup sweet rice flour or potato starch
1 cup tapioca starch (or arrowroot)
2 cups almond flour (omit if you can't have almonds)
2 cups brown rice flour (or half white and half brown rice flours)
2 cups sorghum flour, optional
2 cups chickpea/garbanzo flour (or garbanzo/fava bean flour) - OMIT for desserts or a 'white' flour - I prefer it out, but beans are good nutrition!

Store in a baggie and use in place of whole wheat flour one to one in any recipe except BREAD. I've used this mixture in my regular muffin recipes and it works well. For best results I highly recommend you add 1/4 tsp guar gum or xanthan gum per 1 cup of flour for moisture retention and better binding.

 

Gluten Free Flour Mix (Enriched "white")

This is my previous favourite gluten free flour mix can be an adequate substitute for all purpose flour in many, many recipes. It is like a 'white' flour without the 'bean' taste.

2 cups rice flour (1/2 white, 1/2 brown)
1 cup sorghum
1 cup tapioca starch
1 cup arrowroot (or cornstarch or tapioca starch)
2 cups almond flour

Store in a baggie and use in place of whole wheat flour one to one in any regular or gluten free recipe except regular BREAD (works in gluten free bread recipes). For best results I highly recommend you add 1/4 tsp guar gum or xanthan gum per 1 cup of flour for moisture retention and better binding.

 

Gluten Free Flour Mix (Whole 'wheat' style - lots of nutrients.)

2 cups potato starch (or sweet rice flour)
2 cups tapioca starch
4 cups chickpea (garbanzo) flour (or garbanzo/fava bean flour)
4 cups brown rice flour
2 cups corn starch (or tapioca starch or arrowroot)

Store in a baggie and use in place of whole wheat flour one to one in any recipe except BREAD. I've used this mixture in my
