White Cheese

Taken from Healthy Home Cookin' Vol. 5

A good pizza cheeze or substitute for mozzarella. Gluten free.

3/4 cup water
1 /2 cup raw cashews (or blanched almonds)
1/4 cup sesame seeds
1 pkg silken tofu, extra firm
1 tsp sea salt
1 /4 cup nutritional yeast flakes
2 Tbsp lemon juice, fresh is best
1 tsp onion powder

Rinse cashews well, place in blender with sesame seeds, and cover with water. Blend on high until smooth.  Add remaining ingredients and blend until very smooth.  Wse over pasta, lasagna, or pizza. 

Serves 8

Yields 3 to 3 1/2 cups

Ready in: 10 minutes

Nutrition (per serving): 105.6 calories; 7.0g total fat; 0mg cholesterol; 264.6mg sodium; 191.5mg potassium; 5.7g carbs; 0.9g fiber; 1.1g sugar; 6.6g protein.
